Four Great Main Courses for the Holidays

If you’re looking for something different that will impress your friends and family, check out these main courses that will make your holiday one to remember.

Cider Braised Pork Shoulder

Pork shoulder is a great cut of meat to serve as a holiday centerpiece. If you can, ask your butcher to butterfly the meat. Roll up the shoulder and tie it up with string. Season the meat with your choice of spices and brown all sides in a Dutch oven. Set your oven to 325°F, and while it’s heating, take out the meat from the Dutch oven and add broth, cider, mustard, and honey. Whisk the mixture together and bring to a boil. Return the pork shoulder to the Dutch oven. You can add apples slices, vegetables, and herbs before you place it in the preheated oven. Bake for about four hours.

Slow Cooker Short Ribs

For a comforting meal that looks impressive but is easy to prepare, make short ribs in your slow cooker. Brown the meat in a skillet, and depending how much you’re working with, do it in batches. Place the browned ribs, bone side up, in the slow cooker. Saute some onions in the skillet you used for the short ribs and place those in the slow cooker as well. Add beef stock, orange juice, garlic, and ginger. Cook on low for seven hours. The meat will be tender and falling off the bone. Add a side like polenta or mashed potatoes to finish off the meal.

Stuffed Beef Tenderloin

Start by melting butter in a saucepan and took some garlic and leeks for a few minutes. Add flour to make a roux, then add cream until its smooth. Mix in cheese, spinach, and seasoning to taste. Take off the heat and while it’s cooling, prep the beef. Slice horizontally through the center of the tenderloin and pull open. Flatten the beef and cover it with the spinach filling. Roll up and tie it with twine. Brush it with olive oil and season with salt and pepper. Bake for 30 minutes at 350°F and then 450°F for another 20 minutes. Let the meat rest for at least 30 minutes before slicing.

Lemon Roast Chicken

If you’re having a smaller holiday gathering, roast chicken is the perfect dish. Adding lemon will really elevate the bird. Preheat your oven to 425°F. Season the chicken with salt and pepper. Stuff the chicken with half a lemon, a few half heads of garlic, and some herbs. Place the chicken in a baking pan with vegetables and lemon slices. Add some chicken stock to the pan and bake for about 75 minutes. Once cooked through, remove from the oven, take the chicken out of the pan and pour in some lemon juice. Stir the juice in with the drippings and vegetables.
