Fun Fall Recipes

Fall is officially here and with cooler temperatures and different produce, you’re going to find the opportunity to make some great meals for yourself or your family. Here are some fun recipes for the season.

Grilled Cheese with Apple and Bacon

Upgrade your generic grilled cheese with some of fall’s best offerings. If you live in an area where fresh apples are available, incorporate them into recipes, including this grilled cheese. Using the right cheese and apples will make this culinary staple something even more special. Add some bacon for extra flavor and serve with a bowl of tomato soup.

Stuffed Peppers

Another great fall vegetable is the pepper. There are so many things you can do with this versatile ingredient, but for a filling autumn meal, stuffing them works best. You want the peppers to be pliable enough to work with, so steaming them is suggested. Once they are ready, slice open the tops and pull out the seeds. Rice is typically used for a stuffing, but you can create a stuffing of your choice. Make sure the peppers can stand up, so if you have to, slice some of the bottom off to balance them. Add some cheese on top and bake. These make a great lunch or dinner.

Butternut Squash Alfredo

If you’re in the mood for a creamy pasta dish, but don’t want to pack on calories or feel too heavy, use butternut squash. Start by cutting up the squash and cooking it with some cream and water in a saucepan. Once the squash is tender pour everything in a blender, food processor, or you can use an immersion blender. Puree the ingredients until smooth and use this as your sauce for pasta. You’ll get the same great creamy texture without using a lot of cream or butter. Top with some grated parmesan cheese and serve with garlic bread.

Pumpkin Polenta

This simple recipe will give you a base you can use for multiple meals. Find instant polenta in your grocery store, along with pumpkin puree. Follow the directions to cook the polenta, and when smooth, stir in the pumpkin puree. Add a little butter and salt for seasoning. Use this as a side or a base for roasted vegetables, different proteins, or on its own for breakfast in the morning.
