Four Easy and Healthy Spring Recipes

Winter is a time for comfort food, while spring dishes tend to be lighter. Healthier does not mean more expensive. Here are four quick and healthy recipes that won’t hurt your budget.

Pasta Salad

If you’re looking for a great side for a picnic or barbeque, or a light lunch, make a pasta salad. You can use any pasta you like, and add a variety of vegetables like tomatoes or peppers. Sprinkle in your favorite cheese, sliced meat, and a light dressing to finish the dish off. If you enjoy avocados, click here for an easy-to-make pasta salad with an avocado dressing.

Roasted Vegetable Quesadillas

Roasted vegetables go great with many meals, but using them in quesadillas makes them fun to eat, and will encourage children to try them. Slice some onions, potatoes, mushrooms, and zucchini, season them, and place them in a 400° – 425° oven for 30 to 40 minutes. While they are in the oven, lay out your tortilla of choice and add your cheese. Once the vegetables are roasted, take them out of the oven and put some on top of your tortilla and cheese. Fold your tortilla in half, or place another on top, and cook in a pan on your stove top. Slice and enjoy!

Fresh Salmon Salad

Baked or grilled salmon makes for a great dinner, but if you have leftovers and want to try something lighter, use the rest of your fish to make salmon salad. Flake the salmon and set it aside while you mix together some mayo, lemon juice, salt, pepper, and herbs. Combine that mixture with the salmon and you’ve got a delicious salad for a beautiful spring day.

Breakfast Nests

These breakfast treats will be great for everyone, and they are easy to make. You’ll need a muffin tray, eggs, hash browns, and your favorite fillings. If you like vegetables with you eggs, mushrooms and peppers make great fillings for these nests. You can make your own hash browns or use store bought. Place some hash browns at the bottom of the muffin tray. Add your fillings, then add the beaten eggs. Top them off with some cheese and bake in the oven until the eggs are set.
