Five Easy Meal Prep Recipes

Meal prepping is a great way to eat healthy and save money. Use what’s already in your refrigerator to keep your grocery budget low and make meals for the week. Here are five easy recipes for meal prep.

Overnight Oats

Breakfast is the most important meal of the day. You need energy in the morning and overnight oats are perfect. Put a half cup of oatmeal in a container with your liquid of choice in the refrigerator before you go to bed. In the morning you will have a meal ready for you. Add toppings like fruit or nuts and enjoy a quick and healthy breakfast.

Broccoli Salad

If you’re looking for a great side to pair with a protein or a meal on its own, make a broccoli salad. This delicious and easy choice is very inexpensive to prepare. You can make a lot of it at the beginning of the week and portion it out. Mix broccoli with a few other chopped vegetables, add some dried fruit and a creamy dressing, and you’ve got a nice lunch or a side to have with you meal.

One Pot Chicken and Rice

Here is a recipe that will be a big hit for lunch or dinner and all you need is one pot. First cook your chicken then add some of your favorite vegetables. Once everything is cooked down add your broth or stock, then add rice. You’ve got a full meal in one pot. You can also make a big meal at the beginning of the week and then you will have the leftovers for lunch and dinner. Customize the ingredients to your liking to make a great meal for you!

Pulled Pork

When you want a variety of meals for your week and need to stretch your budget make something as versatile as pulled pork. Using a slow cooker or slow roasting in your oven, you can put pulled pork on just about anything! Make sandwiches, top salads, or enjoy tacos. Having pulled pork as your main protein will allow you to make different meals without spending too much.  

Stuffed Peppers

Anytime you can use leftovers to make a meal, it will save you money. Take some leftover rice, add ground meat and jarred sauce, season it to your liking and stuff the mixture in red or green peppers. Bake the stuffed peppers in the oven with cheese on top and serve with bread or a salad. This dish is great to prepare ahead of time, as it reheats well, making it perfect for lunches and dinners during the week!
