Now that it’s already back-to-school week, it’s a good time to rid yourself of all your old lunch-making habits. Contrary to popular belief, it is possible to make a delicious, fairly nutritious lunch for just a few dollars a day!
1. Polka Dot Pizza Dippers
If your children enjoy pizza as much as I do, they’ll surely go nuts for this inexpensive pizza concoction.
It’s pretty simple: Divide refrigerated biscuit dough as described here by The Good Stuff blog, top it with a tablespoon of sauce and a slice of pepperoni. (Tip for perfection: Add a dash of oregano to each dipper for the perfect spice.)
2. Lunch Kebabs
Quite possibly my favorite lunch (even as an adult!) Simply choose your child’s favorite sandwich fixings, like cheese, with a small piece of lunch meat, and veggies. Then stick them on short skewers (or toothpicks) and place inside a plastic container.
3. Corn Dog Muffins
This lunch is perfect for children who always seem to want hot dogs (and nothing else!) Whip up some cornbread muffin mix, pour into your mini-muffin pan, and drop a piece of a hot dog into the center of each. This recipe can be baked according to the same directions written on your muffin mix box.
4. Ants on a Log
This recipe should bring back some childhood memories – as it’s been a foolproof school lunch for what seems like forever. And why not? It’s cheap, tasty, healthy, and incredibly easy to make.
Simply cut one celery stock into quarters, spread peanut butter along the length of the celery, and sprinkle with a few raisins. This is a great lunch that even your children can make for themselves!
5. Yogurt Parfait
This nutritious lunch can be prepared in just minutes – and even frozen for later! Simply take a small mason jar, drop a layer of your child’s preferred yogurt on the bottom, with a layer of granola on top, and a few pieces of mixed berries. Repeat these layers until you reach the top. And enjoy!
